I have tried similar rice based dosas earlier. I liked cucumber dosa the best. I got this recipe from my follower friend Shruti Bhat. AS I read the recipe in mail, the very instant loved it because of it’s simplicity. I had cucumber in stock too. So tried it out. We all three loved it.

Cucumber dosa is made with rice and cucumber as main ingredients. Learn how to make this easy breakfast with step by step pictures and full video.
Recipe ingredients:
Cucumber – 2
Idli rice – 3 cups
Coconut, grated – 1/2 cup
Green chilli – 3
Ginger – 2 tsp
Salt – As needed
Method
- Wash and soak 3 cups idli rice for minimum 2 hours
- Cut off the ends of cucumber and chop roughly.
- Once rice is soaked, drain water completely.
- Grid chopped cucumber, ginger, green chilli and rice all together with salt, slightly coarsely.
- Add water only if needed, in small quantity as cucumber tends to leave water.
- The consistency should be slightly runny than idli dosa batter.
- Heat tawa and spread 2 ladles of prepared batter. drizzle very less oil over.
- Cook both sides by flipping. Each side for about a minute. Oil is not necessary, add only if needed, but after spreading.
Notes
- While spreading dosa, spread gently. Otherwise batter will stick to the ladle instead of spreading evenly.
- If needed cook covered.
- The batter need not be fermented. You can keep aside just 3 hours, later keep refrigerated.
- I ground coarsely, should have ground a teeny bit more.
- Used Japanese cucumber, other varieties works fine too.
