Corn flakes mixture is an easy Diwali snack that can be made quickly with simple ingredients. I have given deep fried version, but can also be prepared low calorie by using oven.
I have seen corn flakes in mixture, but have not tried preparing mixture with cornflakes as main ingredient. I prepared this same way as poha chivda and turned out really good. I tried deep fried version, but I think it is good to adapt the low fat version either by microwaving or baking in oven. Deep frying is not compulsory if we use the breakfast cereal cornflakes. My oven has become faulty so I could not use it.  Very simple method, just fry/ roast the ingredients and toss with spices.

Corn flakes mixture is an easy Diwali snack that can be made quickly with simple ingredients. I have given deep fried version, but can also be prepared low calorie by using oven.
Cornflakes mixture recipe

Recipe ingredients:

Corn flakes - 3 cups
Peanuts - 1/4 cup
Roasted gram dal - 1/4 cup
Cashews - 12
Raisins - 2 tbsp
Curry leaves - 1 sprig
Ghee - 2 tsp
Sesame seeds - 2 tsp
Turmeric - 1/4 tsp
Red chilli powder - 1 tsp
Asafoetida - A generous pinch
Sugar - 1/4 tsp
Salt as needed
Oil as needed for deep frying

Corn flakes mixture instructions:

  1. Heat oil, deep fry peanuts, cashews, raisins one by one.
  2. I used a big perforated ladle, place each ingredient in it and immersed it in hot oil for deep frying.
  3. Optional step: Deep fry corn flakes in batches or microwave/ bake to make it crisp.
  4. Drain in paper towels and pat off excess oil. It tends to absorb oil more, so make sure remove the excess oil with lots of paper towels.
  5. In another broad pan, heat ghee and add asafoetida, sesame seeds to it. Once its roasted,  switch off the flame.
  6. Add curry leaves, turmeric, red chilli powder, salt and give a quick stir.
  7. Add the fried items, sugar and toss well to coat the spices evenly.
Notes
  • You can opt to shallow fry the ingredients just like we do while tempering for low fat version.
  • Instead of deep frying the corn flakes, you can microwave or bake too. 
  • For microwaving, spread in a microwave proof try and microwave high for 3-4 mins. Mix in between. 
  • For baking the ingredients, preheat oven at 180 deg C. Spread ingredients and roast as needed. Don't forget to stir in between.

I love the sweet addition raisin as well as the sugar, it takes the taste to another level. Also the dal/ nuts balance the taste well.
